Built 3,600 metres above sea level, Hacienda EL Porvenir boasts a spectacular alpine setting on the slopes of the Ruminahui Volcano. In lush, green gardens, the farmhouse was designed to pay homage to the traditions of Andean construction and centres round a large courtyard. There are two dining rooms: one is decorated with colourful, velvet chairs and the other dons authentic wooden decor. Tuck into traditional meals like volcanic rock beef and salmon trout encrusted with Ecuadorian pumpkin seeds - and a huckleberry, chocolate and caramel dome for dessert. Head to the temazcal (sauna), which is heated by volcanic stones doused in herbal liquids... mmm.
With cheery, yellow walls, large windows and finely-embroidered rugs, the rooms are very inviting. Decorated with framed artwork, the suites feature a sitting area warmed by a wood-burning fireplace, while the classic hacienda rooms enjoy electric heaters. Some suites have room for up to four people, which is perfect for a family or group of friends. Every room looks out over the peaceful surrounds, some with views of the rolling hills and others of the formidable Ruminahui Volcano.
Before heading into the mountains, stick around for a cooking class where you'll learn to make cheese empanadas, camelazo and the Ecuadorian staple, aji (hot sauce). Join a local chagra for a horseback excursion and ride very near to Ruminahui's summit where high-altitude birds of prey circle overhead. Enjoy a hike as long or short as you like, with the longest ending at the Owl's Refuge, so named after the Great Horned Owl who lives inside.
